Usually, you’re fighting a battle between the air temperature in the oven and how fast the surface of the dough actually browns. That’s where these 800W infrared (IR) lamps come in. Think of it this way: while the hot air in your oven takes care of the crumb, the IR lamps act like a targeted strike. They use electromagnetic radiation to hit the surface of the dough directly. It’s fast. Really fast. Because the heat flux is so concentrated, it triggers the Maillard reaction (that’s the magic that makes bread brown and smell amazing) almost instantly. You don’t have to bake the bread for an eternity just to get the color you want, which means your loaf stays moist and fluffy on the inside while the outside gets that satisfying, thick crunch.
