Why IR actually works
Most ovens just blow hot air around. The problem? Air is terrible at moving heat. IR is different. Instead of waiting for heat to slowly crawl from the surface to the middle, IR radiation sinks right into the meat. It hits the water and fat molecules deep inside almost instantly. We spent a lot of time tweaking the wavelengths so the heat reaches the core without turning the crust into a charcoal briquette.
No more “heat spikes”
When you’re working with high-wattage elements, things can get out of control fast. One minute it’s perfect, the next you’ve overshot your temp and ruined the dinner. To stop that, we added high-precision sensors that talk to the controller in real-time. It doesn’t just blast heat; it modulates it. You get a smooth, steady climb in temperature rather than a sudden spike that burns the exterior.
The messy part (The Engineering)
Here’s the thing: these IR elements put out a massive amount of heat. Like, a lot. If your oven’s chassis and vents aren’t built for it, that heat just sits there. If your cooling fans aren’t doing their job, your control board is going to fry. It’s a simple rule—more power means you need better airflow.
Getting it into your kitchen
We designed these to be drop-in replacements for standard deck oven arrays. You basically swap out those old resistive coils for our controlled IR elements. Suddenly, you aren’t guessing if the center is cooked. It’s just… done. Consistently. From the edge all the way to the middle. Just a heads-up: check your wiring.
