
Getting that Perfect Golden Brown (Without Drying Out Your Bread)
Ever wonder why some bread has that gorgeous, deep golden crust but the inside stays soft and fluffy? It all comes down to the Maillard reaction. Here’s the problem: standard convection air is just too slow. By the time the air gets the crust brown, it’s often sucked all the moisture out of the center. You end up with a cracker instead of a loaf. That’s why we use stainless steel convection ovens paired with short-wave infrared (IR) heaters. It’s the secret to hitting the surface with intense heat in a matter of seconds.
The “Instant-On, Instant-Off” Trick
Think of it this way: convection does the heavy lifting for the bake, but IR handles the finish. The magic is in the response time. We use heaters that react in seconds. Why? Because the moment the sensor hits the right temperature, the IR element needs to shut off or pulse. If your heater is too bulky—basically, if it has too much “thermal mass”—it keeps pumping heat into the bread even after the power is cut. That’s exactly how you get those annoying burnt edges.
The Nitty-Gritty of the Setup
We house everything in stainless steel chambers. It’s not just for looks; the steel reflects that radiant energy right back onto the bread so you aren’t wasting heat through the oven walls. Now, using high-watt density IR lamps is great because they save space. But there’s a catch. These lamps put a lot of stress on your wiring and contactors. If you don’t spec your electrical panels to handle that rapid on-off cycling, you’re going to be tripping breakers or wearing out your relays way too fast.
Dialing in the Browning
Getting the color right is a bit of an art. Even moving the lamp a few centimeters can completely change how much energy hits the dough. To keep things consistent, we suggest using PID controllers. They modulate the IR output so the surface sets quickly, locking in the moisture while getting that rich color. One last tip: watch your cooling fans. If they’re blowing too hard, they’ll strip the heat away from the surface. You’ll lose that IR effect and end up with bread that looks pale and unfinished.
